• 1 1/2lb small red potatoes, cut into 1/2-inch slices
  • 3 tbsp extra-virgin olive oil
  • 1/2 cup Parmesan cheese
  • 1/4 cup dry breadcrumbs
  • 1/4 cup minced fresh parsley


  1. Preheat oven to 375. Place a baking sheet in the oven to preheat at the same time.
  2. Toss potatoes with oil in a bowl. Combine Parmesan, breadcrumbs, and parsley; add potatoes and toss gently until potatoes are coated.
  3. Arrange potatoes on preheated baking sheet. Bake until potatoes are tender, 30-35 minutes.
